Is there an existing map of the Starfleet HQ/Academy Grounds? I thought it might be fun to model same in 3d - (on the Presidio Grounds) and park Voyager nearby.

There is a non-canon map in the "Starfleet Academy" boxed set from the Last Unicorn Games' old Star Trek RPG. That's about it.

Wasn't there a displaay in "In the Flesh" or was that a schematic of the inside of the station?

If you know anything about the land layout of San Francisco or can find a map, someone here posted a link to a website that had some good photos of Starfleet Headquarters. Since we know the general area it is in, you could be able to make a decent map of the area from the pictures.

I thought I once saw a full-color map - showing those ugly prism-like buildings, etc.
