What are the official lengths of the Dominion fighter and cruiser (PLEASE, no debate about the use of the word cruiser).
I saw that the cruiser was supposed to be 762 meters, but I saw 639,75 somewhere else...

The only official sizes on the two ships come from the Encyclopedia II comparison charts and David Stipes, one of the two Visual Effects supervisors for the last couple of DS9 seasons. The Encyclopedia puts the fighter at about 45m and the cruiser at about 640m, while David Stipes gives their sizes as 500 feet (152m) and 2500 feet (762m), respectively.

The DS9TM gives figures as 639.75m and 68.58m, but this is hardly an independent source - the figures have obviously been derived from the Encyclopedia charts, and the reason Rick measured 68m for the attack ship is because of a wrong assumption (that the ships are all in perfect scale with a 481m long Vor'cha class, but they are not - the vessels are merely ordered by size).

Another reference can be found in the script for "Jem'Hadar" - there, a note to the VFX folks says that "for future reference, this type of Jem'Hadar ship is approximately the same size as a Klingon Bird of Prey". At that time, the only official size for a BoP was 360 feet or 110m, which matches the VFX shots from "The Jem'Hadar" quite well.
