So the new Entertainment Weekly (with Jennifer Garner on the cover) has a 3-page minicle with beauty shots of Enterprise's bridge and Archer's quarters, complete with some neet little zoom-ins.
On the bridge, there's zoom on Hoshi's UT, on T'Pol's scanner, & on the dedplaque. For the record, it reads:
ENTERPRISE SPACECRAFT NUMBER NX-01 JONATHAN ARCHER, COMMANDING
This is then followed by a huge block of tiny-print names of crew members, including the seemingly immortal Berman, Braga, & GR. Finally, the "where no one has gone before" quote is formally attributed to Zefram Cochran on it.
Speaking of Cochrane, among the items in Archer's quarters along with a picture of his college water polo team is a small bronze tabletop-sized version of "THE STATUE." That's right, Zef in all his "hand reaching majestically towards the stars" glory. What a trinket to have.

It's the second time we get a plaque that will be outdated the moment there's a change in the ship's duty roster. The Enterprise-E captain's yacht had a plaque with Picard's name on it, but that was a bit more excusable since it was essentially a private craft for Picard - perhaps the whole plaque was an unofficial addition by Picard himself?
Archer doesn't even have the luxury of replicators to create a new plaque if he's dethroned by another commander...

Having a plaque for a command stating who the CO is and other "oddzenendz" is current policy, or at least custom in many US military commands. Often there is even a picture of the skipper to go along, in the event that someone forgets what they look like I suppose. Not generally the same thing as the building/launch plaque but they could be I suppose.
Such plaques are usually of type that can be locally made/modified and are as snazzy as possible.
It would seem consistant that at least on a human ship that such attention to spit and polish would remain.

Oh heck yea, when I was OCS with the Marines we were always being marched by the plaque with the CO (name and picture) on it. Big fun, let me tell you.

Aw, come on. Trek could indeed use a Buford Early type of character (see the Niven-wannabe works under the "Man-Kzin Wars" title). Or a long line of Beeblebroxes ("A minor mishap with a time machine and a contraceptive vending machine", or words to that effect).

Looking at the actual picture of the plaque, I noticed a few things:
-It's nicely in the style of the TOS Enterprise plaque.
-I can't see the quote well; does it say "man" or "one"?
-It doesn't look like the quote is attributed to anyone, let alone Zef.

It says "man"
The only time the quote or any variation of it was ever attributed to anyone was the supposed ST4 plaque (as seen in Mr. Scott's Guide to the Enterprise) that says, "-taken from the Starfleet charter."
