The encyclopedia diagram was done in a rush, so they got the proportions (and, erm, orientation ) wrong. The DS9TM diagram is more accurate.

Yeah, but unfortunately nobody bothered to correct the Defiant diagrams - the DS9TM Defiant is still overweight.
On the other hand, the Defiant deck plans do have the accurate proportions (or something pretty close).
A general comment: how about we try to stay away from "I spotted a new ship" type of debates before considering the likelyhood that a new ship was introduced without our knowing about it. Similarily, what is more likely? Three separate models of JH cruiser or a mistake by Doug Drexler?

While I tried my best not to be offensive, remembering our previous discussions and the asssistance you gave me with regard to Ron Moore posts, I was a little disturbed at the prospect of a third JH battlecruiser variant under debate given the evidence. Maybe this is not what you had in mind - do you mean that the DS9TM/Encyc diagrams refer to the standard BC and the V-ship, respectively?
Someone mentioned that the V-ship is an early prototype, and remember how far the EncycII goes - mid-fifth season. Also, is the third diagram your attempt at reproducing the V-ship from the side?

Personally, I like the idea of several variants. It makes the Dominion fleet seem more...fleshed out.

I simply rescaled the Encyclopedia version so that it's nacelles/pods were the same size as the DS9TM version, and wala the "V-cruiser." It seems to me from the screen captures we have seen of the V-cruiser, that its proportions match the side view I presented. The only thing I think might be in error is the length (and possibly shape)of the pylons that connect the outriggers (nacelles/pods) to the main hull.
And I do appreciate all the answers and questions you bring to this forum! 8^)
