I don't think any Trek show has fired more of them, come to think of it.

One thing I was wondering, at 0:48 Voyager fires an aft torpedo to set off some explosives, but the shot originates from square on its belly, on the ventral side. I think it's right where this blueprint claims the antimatter loading port is located.

I find it hard to believe that the Intrepid class has four aft photon torpedo launchers. In fact, I can think of ten different episodes when that feature could have come in handy, yet they never used the belly launchers again after that shot.

VFX team fib?

The one from the keel is almost certainly a VFX goof along the lines of the phasers-from-the-torpedo-bay from "Darmok". They probably made that shot because it was supposed to be used for the antimatter bottle ejection in that episode, but instead (IIRC) they didn't show the bottle eject but did show the torp shot from where the bottle should've come from.

And I really think we can dismiss the one from between the launchers, too. Then again, with Nemesis showing torpedoes as being capable of coming out of every window and port-hole thanks to the addition of a dozen mini-launchers, there's no great reason not to have a launcher wherever one might desire, including the keel.
