I've seen mentoned in Treknical fandom that the original Constitution Class Starships were designed or built by a company/corporation called Chiokis. What's the origin of this?

My initial thought is that it's a reference to the "Ships of the StarFleet, Volume One" and related books. Wasn't Chiokis a subctronactor on a system for the ships? Shield design technologies comes to mind....
I'll do some research later. I don't have the time to allot to doing it right now or I'd dig my books out.

I too thought it was from Mr. Scott's Guide, but upon skimming through my copy I can only find mention of the following corporations:
- Leeding Engines, Ltd.
Designer/manufacturer of the refit-style warp nacelles - Shuvinaaljis Warp Technologies
Designer/manufacturer of the original TOS nacelles and the Excelsior's transwarp nacelles - Kloratis Drives of Alpha Centauri
Builder of the new refit impulse engine in conjunction with Leeding -MMoM

It's in Mr Scott's Guide. e.g. page 22.
But most Chiokis references come from FASA.

I don't think so. FASA invented lots of starship manufacturing companies (a sub-set of their RPG rules focussed on merchents and even included data on the UFP's equivalent of the stock market) and their use of NCC has nothing to do with the manufacturer.
Shane Johnson dipped into FASA whenever he wanted a bit of background fluff. What I haven't yet found is any FASA source linking Chiokis to the Consitution/Enterprise class so that may be SJ alone. But there are 30+ FASA books sitting here and it could be in almost any one of them...

The old FASA starship design book mentioned Choikis, as well as the ship rec manuals. I seem to recal the Chandly entry talking about it. I'm at work and can't look it up.

The reason Shane used so much in the way of FASA materials for his Pocket Books published work is because it was licensed thru Paramount. Paramount wanted other licensed materials referenced where applicable.
There is no mention of Chiokis in the FASA "Federation Ship Recognition Manual" for the Chandley class frigate.

Yeah, back then Paramount encouraged cross-pollination of ideas between licensees, now they discourage it. < shrug >
The Chandley class was built by the Chandley ship works. The class was named after an admiral and the company was founded by the admiral's descendents. It was a Terran company.
Chiokis was an Andorian company.

Nope. They mention Andor and Salazzar shipyards for the Andor class. I'd forgotten that beast had four forward photorp tubes.

Chiokis is most definitely a FASA-made comany for starship construction. The most definitive info on Chiokis Starship Construction is the business info on page 101 of the FASA Supplement called "The Federation". It has it's home office of Thelavor, Andor, principal divisions, etc. It also includes its graphic symbol.
