With the ST:M and ST:FF scans coming out I have been looking and seeing what redress of what set. I have composed a basic list based on scans and visual info from videotapes. The basis are for many of these are based on turbolift placement, basic shape and little details that might identify the redress. Here are my conclusions.

Enterprise nil (classic style):
Pike/Kirk Entperises
Lexington (high backed chair)
Defiant (lit differently)

Enterprise nil (movie version):
Reliant
Grissom
Saratoga (ST 4)

Enterprise A:
Excelsior (Sulu)
Enterprise B

I don't see it likely that in TWoK they used the same set for both the Reliant and Enterprise... it'd slow down production far too much, and besides, the turbolift was in a different position.

Similarly, I can't see the Excelsior or Grissom coexisting with the Ent-refit. (Though possibly the ST IV Saratoga.) The Excelsior or Ent-B bridge strikes me as much larger than the E-A, but I just speculating here.

Finally, I don't think we even saw the Tsiolkovsky's bridge, and the "Emissary" Saratoga was a new set built on the DS9 swing set, as shown in a blueprint in The Making of Deep Space Nine. The Odyssey is still really wierd. Didn't it have the E-D's wooden horshoe, albeit with differing floor levels to the E-D and different aft consoles?

Reliant is definately a redress of Enterprise.
How would it slow production? It speeds production.
Dress as Enterprise, shoot for a month, redress as Reliant (move turbolift), and shoot for a month.
And..
look closly at some of the consoles on Reliant, they left the secondary hull display from the Enterprise there.

Of course the Reliant's bridge is a redress of the E-nil's! Just for a real reference, there's a whole long thing in the Captain's Logs book (I think) where they go into detail about "unbuttoning" all twelve of the section of the bridge, allowing them more ease in camera angles and letting them rearrange it as the Reliant bridge. It's stated in The Art of Star Trek too. The E-nil bridge set was the only standing Starfleet bridge set they had for I, II, and IV.

Thanks for the additions Popmaze, very helpful. I noticed in the drawings and visually in the tapes, if you see a kinda hole with a circle that is the Enterprise A, and if it's a squarish descending kind of place, That is the Battle Bridge. Thank goodness for Star Trek Magazine and Fact Files. Although not 100% accurate they are some of the best resources we have, along with the Encyclopedias. Again not perfect but the best we have until we see more publications.

The Shepard bridge was seen on a screen at Headquarters. The officer speaking on the bridge (talking of the ship's problems in relation with encountering the probe) was played by Jane Weidlin of The Go Go's fame.

And i could've sworn that a glimpse of the Phoenix's bridge was seen. O'Brien transports onto the bridge, rings the "doorbell" and is allowed to come in by Capt. Maxwell or whatever his name was, who is startled to see O'Brien.

Oh, *that* Shepherd. Anyway, while I don't remember it well, it's probably also another E-nil redress. As for the Phoenix, all we see outside of the Ready Room is a generic grey wall and a potted plant in the corner outside. Because of this, it's fairly certain that the Phoenix Ready Room does not directly adjoin to the bridge - unless Maxwell liked to spruce up the decor of his command.

Just a note:
While designing the plans foir the Nova-class - I noticed that that bridge is not made up of 12 sections - it is made up of 11 (a circle made up of 22 segments), with some consoles and both doors taking up 2 sections, 3 segments for the aft msd, and 3 for the forward viewscreen.
