I'm not sure how much difference it makes, whether it's the TOS style ship, the Refit Constitution class, the E-A, or later ships. What's actually behind that big dish?
I'm thinking that it's half satellite dish stuff, capable of transmitting fairly high energy signals. Some sort of big coil would seem right, capable of generating a strong EM field... but also something to do with the warp field and/or tachyons, to do FTL things.

Your best bet for a diagram of what's behind the dish is the Next Gen Tech Manual. There was also an article in the ST:Magazine, but I don't know which issue.
Regardless of class, several other systems reside there as well. Three redundant high-power graviton polarity source generators, gamma ray telescope, subspace field coils, long range sensors, variable frequency EM flux sensor, and a few other things are behind the Galaxy Class deflector dish.

Why would they be behind the deflector dish when there's a perfectly good mess hall to use?

No privacy in the mess, unless you're the daring type, and so's your partner. Back when I was still serving on an Excelsior, the most private places you could find onboard were the crawl ways behind the navigational defle....
Wait, are we talking about the same thing?

Obviously no one has heard of the porn classic Behind The Green Door.

"Porn" and "classic" really don't belong in the same sentence do they? Either they work for you or they don't .

No wonder Kirk went to the deflector control in Generations - he knew the area better than anyone else!
And didn't Picard know that the acoustics were good in Jefferies tube 8 junction 15 or what ever!?!
And we know the real reason why Ensign Kwan jumped into the plasma streamer... relations went sour with his co-worker up there... or he was looking for new and exciting places!

Ensign Kwan had noticed a discarded condom under the plasma stream and went was afraid someine on another shift would notice.... He really should have been more careful.

I think he'd pulled the movie archive for "Electric Dreams" While Tasha had previously pulled the movie archive for "Mannequin"

Electric Dreams and Mannequin weren't porn - they were just from the 1980's!
