I'm not sure how much difference it makes, whether it's the TOS style ship, the Refit Constitution class, the E-A, or later ships. What's actually behind that big dish?
I'm thinking that it's half satellite dish stuff, capable of transmitting fairly high energy signals. Some sort of big coil would seem right, capable of generating a strong EM field... but also something to do with the warp field and/or tachyons, to do FTL things.

Your best bet for a diagram of what's behind the dish is the Next Gen Tech Manual. There was also an article in the ST:Magazine, but I don't know which issue.
Regardless of class, several other systems reside there as well. Three redundant high-power graviton polarity source generators, gamma ray telescope, subspace field coils, long range sensors, variable frequency EM flux sensor, and a few other things are behind the Galaxy Class deflector dish.

Why would they be behind the deflector dish when there's a perfectly good mess hall to use?
