Well, as for whether or not he was Jewish... His name was Daniel, and his parents' names are Judea and Ruth. I'd guess that, even if he wasn't Jewish himself, he was probably from a Jewish family. Either that, or he's of Hebrew descent.

He was not knifed to death, the tape showed that he was cut in the throat, then decapitated.
I think they forced him to say "I'm a Jew, and my other is a Jew" before they killed him.
Some say he's working for CIA, but the kidnappers insisted that he was working for Isrealies intelligent service.

The kidnappers first said that he was a CIA operative, then that he was a Mossad agent.
Er ... Blue, having your throat slit with a knife is being knifed to death. Now, I don't when after this he was decapitated, but I don't think it takes all that long to die from a slit throat.
