For the Feds, live and let live (as usual). Help Cardassia rebuild, nurture the good relations with Klingons, milk the temporary goodwill with the Romulans for what it is worth, and stop stepping on Dominion toes on Gamma for the time being.
For the Klingons, restore a traditional government following the honor rules of Kahless. Martok can't try anything too radical, since he's a Commoner among Nobles and may stand to lose his popularity if he isn't careful. He has to solidify his support first, probably riding on the war victory and rewarding his wartime allies.
The most radical thing Martok is likely to do is to move closer to the Federation - and this time the Empire will probably be happy to do so, since the Feds showed "Klingon spirit" in the recent war. The pro-Romulan factions in the Empire will probably fall silent for the time being. Or will they re-emerge now that their strongest opponent, Gowron, is dead? Hardly, since Worf, Slayer of Duras, is whispering in Martok's ear - the pro-Romulan forces would have to go against him, and thus against the war hero Martok.
For the Romulans, probably business as usual. Every second week they will try to take over the universe while fighting internal political battles. They haven't been weakened all that much in the war, and the only enemy that might wish to strike them at the moment is unable to do so - the Klingons are too hurt and their ruler in too precarious a position.
For the Dominion, I don't see any major changes in Gamma policies just because Odo joined the link. There might be some decrease in their solid-paranoia, and a subsequent scaling down of Jem'Hadar conquest operations, but the already existing Dominion structure will probably stand as it is.
Don't fall into thinking the Dominion lost the war because it was weak. Quite to the contrary, it proved it is far mightier than anybody else, save for the Borg. A beachhead force, totally separated from the Gamma quadrant, managed to almost defeat the three most powerful Alpha empires in battle. It's as if the 1942 Dieppe Landing force had managed to not only hold its ground, but almost defeat the joint forces of Hitler, Mussolini and Stalin while receiving no reinforcements from across the Channel and relying only on weapons manufactured in France... Taking of Betazed and other UFP key worlds would be comparable to the Dieppe troops taking Frankfurt in 1943 and holding it until 1945!

Good call Timo. That is something that we tend to forget. There's still legions of Jem'Hadar in the GQ. Unless the Founders change there ways and come to the good side of the Force, the Jem'Hadar will be as deadly as ever. If they decide to come through, it could be Deja vu all over again. (not that that would make a particularly good story.)

There's always an interest in "gee, what happened?"
It's always cool to hear people's thoughts on the matter.
I imagine the Dominion would be surprised and hurt by the loss. It's like Vietnam ... they never lost anywhere or to anyone, and now that they have, they might re-examine how they do stuff.

Does anyone know why the Breen don't play a larger part in the series'? They seem awfully sedentary considering the size of their space as per Timo's map

I'm sure we would've said the same thing about the cardassians, had the breen taken their place in the shows. Even the bits we DID see of them and their psyche in DS9 was very alien and mysterious. It's good to have some race in the shadows...
