Was looking through the IMDB, saw that apparently Christian Slater had a guest role in TNG's "All Good Things. . ." as a character called Sutcliffe, but his scenes were deleted. Had never heard this before - anyone know who this guy was meant to be, and why the scenes were cut (more than likely for reasons of pacing)?

Uh ... wow. I have no idea (and I don't have the novelization to try to figure it out, either). I'm sure it's just a cameo along the lines of his Star Trek VI: apparance.
With a name like that, though, I'm kinda thinking he would've been one of Data's aides at the university
Maybe he'll be in the DVD release.

The Sutcliffe thingy goes a little something like this...
In an early draft for 'All Good Things', there was a character on the (first season) Enterprise, a bridge officer. He was intended to leave the bridge in protest at Picard's daft notions, to be replaced by O'Brien.
The name Sutcliffe was meant to be a nod to the fifth Beatle, Stewart Sutcliffe. The idea was that he would have missed out on the big adventure, just like the original Sutcliffe.

Plus, there are thousands of actors, actresses, directors, stockboys, turnips on there, so the veracity of some things are easily called into question.

It would've been stupid to have Slater on (being an ensign in VI), that's why they cut him out. Don't know why they let Tim Russ be Tuvok, but...
If there is a version of AGT with him in it, it's probably in his own closet, next to the weed. End of story. Beginning of turnip.
