I was thinking... maybe a reason for the delay in the DVD release of the director's cut of the TMP - is that they might superimpose the "Enterprise" Akiraprise over the SS Enterprise originally seen on the rec dec!?!

I suppose that there is the possibility, but I somehow doubt that's the reason that the DVD has been delayed. I thought the delay was caused by problems in editting all of the special features and interviews together.
However, I personally would find the insertion of the new Enterprise into the rec deck shrine to be a bit pointless. That clearly wasn't a shrine to all of the ships named Enterprise because it excluded all of the wooden sailing vessels and some of the later carriers named Enterprise.
But I still think it would be interesting if they did it anyway. Plus one would think that the direct predecessor to the E-nil would featured on the Wall o' Enterprise.

::shrug:: Who knows if the new Enterprise is the direct predecessor of the Enterprise-original? Okudian history says the Enterprise-original was launched in 2245. I doubt the new Enterprise lasted more than a few decades, so we could have a gap of 45 to 75 years in there. Of course, there was an almost 20 year gap between the Enterprise-C and the Enterprise-D. So, once again, ::shrug::
