Y: is the distance from the north pole.
Z: is the distance from the planet's center.
Wouldn't it be simpler to keep X and Y as latitude and longitude, with Z being distance from the centre of the planet?
Oh, and to answer my own question, our moon does indeed have a longitude system set up, with a prime meridian (obviously enough) set smack in the middle of the side facing the Earth.
