The V-winged cruisers are simply the normal battlecruiser but look a little different because they were represented by a short-lived miniature/CGI (not sure which). The original fleet of cruisers that came through the wormhole were all V-wings yet all the cruisers later seen are the established type. Anyway, it's pretty clear they're meant to be one and the same.
And yes indeed, the "Valiant" battleship weapons must of been torpedos since there was a scene where the bolt/torpedo things fired in a tracking arc.

Notice that the Dominion have no intermedeate sized ships? It's either small attack ships(90ish meters) or huge cruisers (between 650-700 meters) and the obscenely large battleships (1500 meters or thereabouts). While it's by no means canon, you should check out the Jemmie Light Cruiser made for the Dominion Wars PC game. The game sucks but looks amazing and has several great and -sucky- original starship designs for the Dominion, Cardassian and Federation.
You forgot the obscenely huge Dominion "dreadnaught" shown in orbit of Cardassia in "What You Leave Behind"...
Has anyone taken a shot at sizing that monster?
