maybe it could have a semi-colon inserted - it changes the feel of the whole sentence:

I hate to inject a note of dissent, but I have heard from reliable sources that human flesh tasted rather like pork, hence the term "long pig". I havent't done any research to back that up, but the sources were reliable, after all.

Probably true. I mean, chicken is white meat. And human would be red. So it would probably taste more like pork or beef than chicken.
