Who would you choose, and why? And what starship would you command? Any starship, any character (from any series, so you could take Ensign Chekov from TOS, or Commander Chekov from the movies -- but not both! -- for example).
For myself, I'd like to command an Akira-Class starship ... the USS Valor.
I'd want Lt. Worf (from 3rd - 7th season TNG) as my Tactical and Security Officer for obvious reasons -- he's a Klingon, he's big, he's imposing, and he gets the job done well.
Dr. Julian Bashir (from late DS9) is an arrogant prick, I'll give him that, but he's also a dammed fine doctor, and I'd be proud for him to be my Chief Medical Officer.
Commander William T. Riker (from 3rd season TNG) as my Executive Officer for the simple reason that Riker is probably the most qualified XO I think I've ever seen in Trek ... he knows his job, and he's not afraid to call the captain aside when the CO tries to go outside of his job.
For Operations, I think I would want both Lt. Commander Data and Ensign Harry Kim with Kim as either Mission Ops or relief Ops officer.
Lt (jg) Geordi LaForge for helm -- what better than having a blind man steer the starship? Besides, it's kind of ironic, ain't it?
Obviously, I'd need another Conn officer at some point, so Sulu from TMP -- giving him the rank of Lt. Commander, he could also act as second officer.
Spock as Science Officer. Why not, can you figure a better position for him than Science Officer? Taking him from "The Cage", he would be a Lieutenant.
Miles O'Brien as Chief Engineering Officer. He's got the knowledge, he could handle it, especially with Nog and Barclay as his assistants.
I'd bring Chekov (from TMP) aboard as a generic "Bridge Officer" (similar to Worf's role in early TNG). He would fill in at whatever stations were empty at the moment.

I'm going to have to go with the Prometheus since it is a deep space explorer. I'm all about the science. Ship: USS Dark Matter
Captain: Me duh!
XO: Shelby She is like Riker in most respects so I think she would do a really good job
Tactical: Worf Do I even need to explain this
CMO: Julian Bashier He's good and arrogent enough to never quit. Nobody else even comes close.
Science: Nella Daren She is damn good and knows how to get things done no matter whos toes she steps on.
Engineer: Geordi Again do I need to explain this.
Helm: Paris He knows how to fly and when to speak up. Wouldn't want anyone else there.
Ops: Kim I know he is still an ensign but dammit he's good.
Others I would want onboard
Medical: Ogawa Science: Dax, Taitt Engineering: O'Brian, Nog

I would staff my ship with these people: the best and the brightest. And the cutest. And the cuddliest. And the hottest. And all the rest of the crew would be international female models with brains and personality exceeding even the most cliched of Amazon B-Movies. Who demonstrate only the fiercest loyalty to their captain.
As for the ship itself, I don't care what class it is, as long as the adjoining ready room has shag carpets and a vibrating bed.
