I'm currently compiling a list of real-life Earth spacecraft actually seen or mentioned in Star Trek. I believe I have most of them, but I'd like to know if I missed something (perhaps in the form of obscure desktop models or matte paintings, etc.).
Currently I have:
Apollo-11 (mention of the first moonlanding in "Tomorrow is Yesterday" [TOS], Apollo-model in Wesley Crusher's SFA quarters in "The First Duty [TNG], Apollo-11 400-year anniversary festivities plaque in Harry Kim's San Francisco house in "Non Sequitur" [VOY])
International Space Station (opening credits ENT)
Pioneer-10 (ST V)
Space Shuttle Enterprise (rec-deck ST:TMP)
And the Voyager-6 from ST:TMP, semi-confirming the existence of the real-life Voyager-1 and -2 probes in the ST universe.

Some of this depends on your definition of "real." The ISS in Enterprise's opening credits is not the same ISS that we've got, as the design of the real thing has been cut back as the cost overruns become impossible to ignore.
Along the same lines, Sisko had a model of an earlier design for the station, back when we were still calling it Freedom.

Enterprise (edit: The shuttle, of course. ) does also appear in the credits of Enterprise as do some other ships (I think the Apollo 11 lander, too).
The rocket (I think it was - or was supposed to be - a Saturn 5) in 'Assignment: Earth', TOS
Is the Ford pickup from 'The 37's', VOY concidered a spacecraft?
TVH was dedicated to the victims of the Challanger explosion. Does that count?
What about 'Future's End', VOY? Didn't they mention Hubble?

That isn't the VentureStar, though it does look a bit similar, but then most second generation shuttle designs do.

I don't know if anybody's mentioned it yet, but the Space Shuttle Orbiter Enterprise (OV-101) is in the credits for Enterprise.

Oh, I guess it might've been already.
Did we mention the space shuttle docked at Sisko's ISS-model? I think it was the Enterprise.

I think I heard something about that... Although knowing the Russians, by the time they have Buran up and running the US will be using the next generation shuttle.

I thought I heard something about some Russian hangar facility's roof collapsing... though they didn't say it outright, I got the impression that it was something related to the old Buran.
