I know it says you want PC Games but do you want to include console games as well? If so:

Invasion also has the USS Discovery: a Steamrunner class starship (i'm not sure of the registry though).

There's an alternative universe Constitution class in Elite Force 1 (you know, ISS somethingsomething), but I don't think it's ever given a name.
(And none of the characters mention it either. I'm not a massive fan of uber-nerdy references, but I thought it was a very, very cool, er, easter egg? Something like that.)

Did anything say it was Constitution persey? I remember the interiors, but I thought it possible it might only be a ship with simmilar interiors
