It's from the Mr Scotts Guide to the Enterprise book. The trees are a "botanical garden" or an indoor arboretum for crew recration and botanical science onboard the ship.
I think we once saw something like that on the E-D (but I might be mistaking a holodeck episode or something).

Yeah, the E-D had an arboretum that was shown in a few episode. Keiko worked there. It was in the episode with the imaginary friend and O'Brien's wedding, among others.

Nothing says they cant have a potted tree in some corner or outside an office either- it's no stretch to place a UV lamp over it. Heck, you'd think that ships serving within the Federation's interior and starships serving dilomatic roles would have everything from aquariums to holographic-accented alcoves which would display artworks or scenes from around the federation.
Stroytime in the interactive holographic classroom would be cool as heck too.
Hmmm...we've never seen it but there could be large starships that serve as mobile universities- particularly ones specializing in subjects like astrophysics or archeology.

I can easily imagine the holodecks be used for emergency triage using the EMH system with the regular medical crew.

You could always rasterbator it. You know - it's a site where it converts so you can print sections out in A4 and then stick them on the wall mosaic fashion to get a very large picture.
