Huh? Everyone knows that the name wasn't changed on the model because it wasn't meant to be seen, but we also know that it wasn't really the Defiant.

And why not? Maybe Starfleet wanted to use the Defiant in pursuit due to it's cloak. The Defiant may have been behind that Nebula class ship that got busted all the time, in pursuit.

But there were TWO Defiant class ships in the episode!!

Look at the facts. The Defiant based on the very borders of the Federation in the Alpha Quadrant. The Prometheus was on the opposite side of the Federation, and may even have been in the Beta Quadrant (logically, it was, but the writers messed up).
Now, the Defiant does not have a massively high warp capability - not much better than 8, I believe. We're expected to believe that it travelled nearly a quarter of the way across the galaxy for one engagement at the height of the Dominion War? I mean, shrugging off an unusually short travel time from Bajor to Earth is one thing, this is another!
More research is needed. The stardate of "MiaB" for one thing; you then look at episodes of DS9 set at around that time, and see if the Defiant featured at all. I think you'll find it will, with a close-enough conjunction of dates to rule out any trips to the Romulan border. . .
It's probably an SWDAO. Do we accept that they're unlikely to name another ship with two syllables corresponding to another example - and the class ship at that, so this vessel IS the Defiant? Or do we accept that they HAVE chosen a similar name, and that the Defiant we all know and love couldn't possibly have made this trip?
Of course, if only "DEFI" was visible, it could be named for some future person or something. It isn't necessarily anything like "Defiant". It could be "Definnegan", or some such.
Anyway, MiaB apparently didnt have a stardate (I'm getting my info from the official site, though, so who knows?), but it's between episodes at 51471.3 and 51501.4, so let's call it about 51486. Now, most DS9 eps don't have stardates, but, fortunately, we have one close to this, "One Little Ship" on SD51474.2. This gives them about four days to have gotten from near the Alliance border to near the Romulan border. I doubt it...

If that's the case, Voyager sure is taking its time to get home.
