Both class names appeared only on dedication plaques AFAIK (if that's what you're asking).

I think that makes Horation the first and only ship that got a class name on-screen but no physical model.
I think they called the Hood an Excelsior-class-starship in 'Encounter at Farpoint'.
Oberth was never mentioned on-screen, Checkov just called it a 'scout-vessel' in STIII.
I thought they called the sharship Lantree a Miranda-class vessel, but I think it was just 'class 4-supply ship' or something.
I remember the scene from 'Hippocratic Oath', but no other scene. The Jem'Hadar said it was a Danube-class ship.
'Peregrine' was mentioned on-screen by Dukat, I think, in 'The Maquis', allthough we didn't get a design for the ship.

I believe "Peregrine" came from "Heart of Stone", and it was Kira or someone liek that who mentioned it.
And I'm pretty sure the name "Miranda class" has never been said in dialogue. After all, aren't there still people who insist upon calling it "Avenger class"?

I'll just share this info about "Valiant-class"; my apologies to those who might know already, but it's something I recently learned from reading exactly two ancient posts by Doug Drexler and Mike Okuda in Google Groups...
After the name Valiant had been ditched in favor of Defiant to avoid confusion with Voyager, the next idea was that the Defiant would be a Valiant-class ship, not the first ship of its class. Okuda even had a dedication plaque made with an NCC- number. It was then decided to make the ship a prototype, at which point the Defiant received the familiar dedication plaque.
Of course, the writers then decided that the ship came from from Utopia Planitia, at which point Okuda threw up his hands in the air and never made another Defiant plaque.
And no, this is not an April's Fool joke.

I remember some early models (like the one you could flap open and there was that small bridge set inside, with the tiny figures... ) called the ship a Valiant-class, too.

Defiant-class wasn't mentioned in "Valiant." Jake and Nog are in the runabout evading Dominion weapons fire when the Valiant comes on the scene. Jake says something to the effect of "It's the Defiant! No, wait, it's the Valiant?"
The only instance I can think of for hearing "Defiant-class" is the episode in season seven of Deep Space Nine where the Sao Paolo arrives at the station. Ezri Dax says, "I didn't know they were sending us another Defiant-class ship."
As far as Sovereign-class goes, if it's mentioned in dialog then it has to be in First Contact. I just rewatched Insurrection yesterday, and there's no mention of the Enterprise-E's ship class. I would check First Contact, but my copy of it is missing at the moment.
And, here's another one that I'm unsure about. How about the New Orleans class? I remember that we know it's a frigate from dialog, but was it called a "New Orleans class frigate" like the Ambassador class was?

Ya know, I completely skipped over the New Orleans class in your last post, Red Admiral. That's what I get for speed-reading. Sorry 'bout that.
Anyway, I can't think of any other times any other class of ship was mentioned. I guess this shows us exactly how much of what we take for granted as the norm of Star Trek is from background information and the like.

I don't think that EMH-2 mentioned the words "Prometheus Class", but I'm pretty sure that he specifically called the ship a prototype. Therefore, it's the Prometheus Class, using the same logic as was used for the Excelsior in ST 3.
