Siegfried's Quick and Easy Recipe for: Red Beans and Rice with Sausage
Serves approximately six people
Ingredients and Supplies: * Six 8-ounce cans of Rotel tomatoes (or other brand of diced tomatoes with peppers) * Four 12-ounce cans of light red kidney beans * One family pack of Eckridge brand kielbasa sausage (or other brand and flavor of pre-cooked sausage) * Your favorite brand of boil and serve white rice * Two large pans and a colander
Tossing it together: 1. In one pan, fill with water and set to boil for cooking the rice. 2. In the other pan, combine the six cans of Rotel tomatoes and four cans of light red kidney beans. Set this pan on burner to high. Stir frequently to prevent scorching of beans. 3. Begin slicing the sausage into quarter-inch to half-inch thick slices. Place into pan with the Rotel-beans mixture. 4. Bring Rotel-beans-sausage mixture to a boil and then reduce burner setting to Simmer. Allow this pan to simmer for thirty minutes remembering to stir frequently. 5. Once the water pan begins boiling, cook the white rice according the instructions.
To Serve: 1. Place a mound of white rice on a plate or bowl. 2. Ladel the Rotel-beans-sausage mixture on top of the white rice. 3. Enjoy.
